First, spread the butter over a single side of each piece of bread. Set the bread aside, buttered side up.
Next, cut the slices of brie cheese and apple and take out the apricot preserves. Set up all of the ingredients around your cooktop.
Put a slice of bread, buttered-side down on a cold pan, turn on the stovetop, and build the sandwich while the cooktop temperature rises to medium. First, lay a single layer of brie on top of the slice of bread. Then, add a layer of apples. It’s okay if they overlap. Spoon the apricot preserves over the top and cover everything with a smaller second layer of brie. Top the sandwich with the second piece of bread, butter side up.
Let the sandwich continue to cook, until the bottom browns and becomes crispy. Flip the sandwich over and let the other side cook until brown and crispy as well.
