Ingredients
- 1½ tablespoons butter
- 2 pieces Italian loaf slices or ciabatta
- 2-4 oz triple cream brie
- ⅓ Fuji apple, sliced, (about 5 slices)
- 2 tablespoons apricot preserves or jam
Equipment
- 1 cutting board
- 1 paring, slicer or cheese knife
- 1 knife or spoon
- 1 sauté pan optional
- 1 food turner / flipper spatula optional
- 1 baking tray optional
Instructions
- First, spread the butter over a single side of each piece of bread. Set the bread aside, buttered side up.
- Next, cut the slices of brie cheese and apple and take out the apricot preserves. Set up all of the ingredients around your cooktop.
- Put a slice of bread, buttered-side down on a cold pan, turn on the stovetop, and build the sandwich while the cooktop temperature rises to medium. First, lay a single layer of brie on top of the slice of bread. Then, add a layer of apples. It’s okay if they overlap. Spoon the apricot preserves over the top and cover everything with a smaller second layer of brie. Top the sandwich with the second piece of bread, butter side up.
- Let the sandwich continue to cook, until the bottom browns and becomes crispy. Flip the sandwich over and let the other side cook until brown and crispy as well.
- Plate, cut if you desire, and enjoy!

Well, we obviously have the pan-grilled option in the recipe above. But there’s an even simpler way to make this sandwich if you want to cut the time in half. Use the microwave. Yep! You heard me!
Stack the ingredients as listed, and place the sandwich in the microwave for between 45-60 seconds on a low setting or power level. Look for setting labels like “soften cream cheese”, “melt chocolate”, “bread”, or “pizza”. Let the microwave run for 30 seconds and then check the apple and brie sandwich every 15 seconds until it’s warm and melty. I do recommend something like ciabatta for this cooking style. The holes in sliced bread get a little messy without the structure from making a grilled cheese.
Another option, if you use a more roll-like bread and not sliced bread, is cooking the sandwich like a panini. If you have a press then you are all set. If not, place the sandwich in a large sauté pan. Then settle a heavy pot or another pan on top of the sandwich to press it down while cooking. Your apple and brie grilled cheese will be done when the brie has melted.
White breads with good structure are best for brie and apple sandwiches. They are sturdy with a clean taste, so the fillings can shine. Sliced focaccia, single serve ciabatta rolls, Italian loaf slices, and even English muffins work for this sandwich.
Additionally, look for breads that aren’t too thick, unless you feel like double decker-ing the ingredients.
While the best apples for this sandwich, IMO, are Fuji apples, because of how crisp and sweet they are. There are several other apples that will work without other substitutuons: gala, honey crisp, cosmic crisp, and red delicious all work. If you substituted the apricot spread with a sweeter one, the apple choices can expand all the way to granny smith if you’d like. Just keep in mind the balance between the fruit and the spread and how well they compliment eachother.
